So, here is our meal plan for this week:
Monday- Roast lemon rosemary chicken on top of roasted vegetables (potatoes, mushrooms, onions, red and yellow bell pepper). This is the ultimate one pot meal. I just cut up all the veg, throw the chicken on top and roast at 425 for an hour to an hour and 20 minutes.
Tuesday- We ate out at Ye Old Fashioned. I had an egg salad sandwich, the boys had hot dogs. It was so not a healthy day!
Wednesday- Chicken Korma, Saag Paneer, and Garlic Naan. This is an Indian meal. The chicken has a spicy coconut sauce, Saag Paneer is a spinach dish with Indian Paneer cheese in it. Naan is a type of flat bread.
Thursday- Grilled Terriyaki Pork Tenderloin, Boxed pasta Salad made healthier by adding more peas and bell pepper, and steamed carrots.
Friday- Oven braised Babyback ribs with BBQ sauce, baked beans, corn on the cobb, and garlic bread. My son adores ribs and beans and corn, so this meal is all for him.
Saturday- Shake and Bake Parmesan Chicken nuggets, steamed green beans, and smashed garlic potatoes.
Sunday- Chuck roast in the crock pot, mushroom brown rice, and roasted broccoli.
We do eat a lot of garlic. This week is unusual because we are eating more pork than normal, and we are not eating any seafood. If I find some good looking fruit at the store over the weekend, I might make a crisp.
So, what do you eat for dinner? Is there a regular go to meal that you eat every week? Does your family always eat dessert? Tell us, because enquiring minds want to know.
Well, since I cannot remember what I wore yesterday there is no way I can remember what we ate. However, for Sunday's dinner I am doing pork chop casserole with brown rice and green beans. Tonight we had pizza from Little Caesars. Basketball game and sinus infection and plain tired = a cheap and quick meal for us. I like to cook. I don't like to clean up and I don't find I have a lot of time to be creative. Therefore, we eat a lot of spaghetti (homemade), roast in crock pot with veggies, or hamburgers. I am boring. I love reading your posts. I look forward to leraning more from you.

Tonight we ate left over Chili. Now I don't make my chili really spicey because of my children. We served it over brown rice and cheddar cheese on top. It was good. Tomorrow night is Friday and that probably means take out or something easy.
